Nowadays people are becoming more and more conscious about what they eat and drink, and the effects thereof on their health and wellbeing. With regards to wines it is notable that the alcohol content of wines has substantially risen over the years due to the higher sugar content of the grapes, which by the way is related to the global weather changes.
Wineries are already doing their best to contain the alcohol content of their wines, as besides increasing calories, above a certain level the alcohol content of the wine also tends to mask the taste. Often high alcohol wines with a high aroma content have to be blended with lower alcohol wines with less body to restore the balance in taste.
With the DALCANTER we are introducing an additional option for you the wine consumer. The DALCANTER gives you the opportunity to decide yourself in your own home and/or at a restaurant whether you want to reduce the alcohol content (and hence also the calories) of your favorite glass of wine or not. It will be a matter of which wine you are drinking and the taste, your taste, whether you will make use of this opportunity or not.
Over the last 2-3 years of research, we have found the best results with large body high alcohol red wines (>14%). Reducing the alcohol content from above 14% to the 12% range actually improves and opens up the taste. On the other hand lighter wines with an alcohol content below 12-13%, tend to loose too much of their body and taste when the alcohol content drops below 10%.
But it remains a matter of personal taste!

As shown in the video clip above, alcohol reductions of up to 40% is
possible; But we have found that in order to maintain the full wine taste a reduction of not more than 25% is preferred.
Our patented technology can successfully be implemented in current winemaking processes. It requires no extra energy and especially for countries with an increased sun intensity it will be a helpful development.
